Ingredients
- 1 tbsp olive oil
- 1 tbsp butter
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- 1 lb boneless, skinless chicken breast or thighs, cut into 1-inch pieces
- 1 ½ cups short grain rice
- ½ cup dry white wine (optional)
- 5 cups hot water
- Nidos chicken seasoning powder (adjust to your preference)
- ½ cup grated Parmesan or Edam cheese
- ½ cup frozen peas, thawed (optional)
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish

- Prepare the stock. In a separate bowl or heatproof jug, whisk Nidos chicken seasoning powder into 5 cups of hot water until completely dissolved. Keep the liquid warm on the stove over low heat.
- Sauté the aromatics. Heat the olive oil and butter in a large pot or deep skillet over medium heat. Add the diced onion and cook until softened and translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
- Brown the chicken. Add the chicken pieces to the pot. Cook, stirring occasionally, until lightly browned and cooked through. If using diced chicken breast, be careful not to overcook it. Remove the cooked chicken from the pot and set it aside.
- Toast the rice. Add the short grain rice to the same pot and stir constantly for 2-3 minutes, until the grains are translucent around the edges and well-coated in the oil.
- Deglaze (optional). If using white wine, pour it in and stir constantly until the liquid is fully absorbed by the rice.
- Cook the risotto. Begin adding the warm chicken stock, one ladleful at a time, stirring constantly. Wait for each ladle of liquid to be mostly absorbed by the rice before adding the next. Continue this process for 20–25 minutes, or until the rice is creamy and cooked al dente (tender but with a slight bite).
- Finish the risotto. Turn off the heat. Stir in the cooked chicken, Parmesan cheese, and thawed frozen peas. Mix until the cheese is melted and the ingredients are well-combined.
- Serve. Season with salt and pepper to taste. Garnish with fresh parsley before serving immediately.
