Ingredients
1 Nidos Schezwan Noodle Bhel
1/2 cup shredded cabbage
1/2 cup julienned carrot
1/2 cup thinly sliced capsicum (bell pepper)
1/4 cup chopped spring onion greens and whites
2 tsp finely chopped garlic
1 tbsp oil
2–3 tbsp Schezwan sauce (adjust to taste)
1 tbsp tomato ketchup
1 tsp soy sauce
1/2 tsp vinegar
Salt to taste
Chaat masala (optional)
Fresh coriander for garnish

Preparation
Prepare the vegetable mixture:
Heat 1 tablespoon of oil in a wok or pan over high heat.
Add the chopped garlic and sauté for a few seconds.
Add the spring onion whites, capsicum, carrots, and cabbage. Stir-fry for about 30 seconds to keep the vegetables crunchy.
Assemble the Nidos Schezwan Noodle Bhel.
In a large mixing bowl, combine the Nidos Schewzan Noodle Bhel with the vegetables.
Toss gently but quickly to ensure everything is coated before the noodles get soggy.
Serve immediately:
Garnish with fresh coriander or extra spring onion greens.
For extra crunch, you can add some raw chopped onions, green chilies, and peanuts just before serving, similar to traditional bhel.
