Ingredients

  • 1 pack of Nidos Masala noodles
  • 2 tablespoons butter
  • 1/2 cup milk or cream
  • 1 cup grated cheese (cheddar, mozzarella, or a blend)
  • For the masala noodle bake:
    • 2 tablespoons oil
    • 1 small onion, finely chopped
    • 1 teaspoon garlic, minced
    • 1/2 teaspoon turmeric powder
    • 1/2 teaspoon chili powder
    • 1 pack of masala noodle
  • For garnish (optional):
    • Red chili flakes
    • Fresh coriander

Preparation

  1. Cook the noodles. Prepare the instant noodles according to the package directions, but remove them from the heat a minute early so they are slightly undercooked. Drain and set aside.
  2. Create the masala cheese sauce. In a saucepan, melt the butter over medium heat. Add the onion and garlic and sauté until softened. Stir in the turmeric and chili powder for 30 seconds.
  3. Build the sauce. Pour in the milk or cream and simmer gently. Stir and add half of the grated cheese. Continue stirring until the sauce is creamy and the cheese has melted.
  4. Combine and bake. Mix the cooked noodles into the cheese sauce until fully coated. Transfer the mixture to a small, oven-safe baking dish and top with the remaining grated cheese.
  5. Bake until bubbly. Bake in a preheated oven at 180°C (350°F) for 10–15 minutes, or until the cheese is melted and golden.
  6. Garnish and serve. Sprinkle with red chili flakes and fresh coriander before serving hot.
