Ingredients
For the chicken and marinade:
400 g (about 3 fillets) boneless chicken thighs, sliced into thin strips
2 tbsp soy sauce
1 tbsp cornstarch
For the sauce:
2.5 tbsp soy sauce
3 tbsp honey
1 tbsp Chinese cooking wine (or rice wine)
2 tsp dark soy sauce
1 tbsp sesame oil
Cracked pepper, to taste
For the noodles and vegetables:
400 g dry egg noodles
3 tbsp neutral oil (like canola or vegetable oil)
3 cloves garlic, finely chopped
5 mushrooms, sliced
1 carrot, julienned
½ onion, sliced
1 bok choy, chopped

Preparation
Marinate the chicken. Combine the sliced chicken with 2 tablespoons of soy sauce and 1 tablespoon of cornstarch. Mix well and set aside.
Prepare the sauce. In a small bowl, whisk together the soy sauce, honey, Chinese cooking wine, dark soy sauce, and sesame oil. Set aside.
Cook the noodles. Bring a large pot of water to a boil. Add the egg noodles and cook according to package directions until al dente. Drain, rinse with cool water, and toss with a little oil to prevent sticking.
Stir-fry the chicken. Heat 1 tablespoon of oil in a wok or large pan over high heat. Add the marinated chicken and stir-fry for 1 minute, until lightly browned.
Add aromatics and vegetables. Add the chopped garlic, mushrooms, onions, and carrots to the pan. Cook for about 1 minute, then add 2 tablespoons of the prepared sauce and toss. Cook for another minute.
Combine ingredients. Add the bok choy and toss for about 20 seconds. Remove the cooked chicken and vegetables from the wok and set aside.
Fry the noodles. Add the remaining oil to the hot wok. Add the cooked noodles and fry for 3–4 minutes until they begin to brown slightly.
Finish the dish. Pour the remaining sauce over the noodles and toss to coat evenly. Return the chicken and vegetables to the pan and toss to combine. Garnish with spring onions or white sesame, if desired.
